Salmon in honey mustard glaze

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 tablespoon soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley or chives, chopped (optional, for garnish)

Instructions:

  1. Prepare the Glaze:

    • In a small bowl, whisk together honey, Dijon mustard, whole-grain mustard, soy sauce, olive oil, minced garlic, and lemon juice until well combined. This will be your glaze.
  2. Season the Salmon:

    • Preheat your oven to 400°F (200°C).
    • Pat the salmon fillets dry with paper towels. Season both sides of the salmon with a little salt and pepper.
  3. Glaze the Salmon:

    • Place the salmon fillets in a baking dish or on a lined baking sheet. Brush or spoon the honey mustard glaze generously over the top of each fillet.
  4. Bake:

    • Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork. The exact cooking time will depend on the thickness of the fillets.
  5. Garnish and Serve:

    • If desired, garnish with chopped fresh parsley or chives before serving.
  6. Optional Broil:

    • For a caramelized finish, you can broil the salmon for an additional 1-2 minutes at the end of baking. Keep a close eye on it to avoid burning.

Serving Suggestions:

  • Serve the honey mustard-glazed salmon with steamed vegetables, rice, quinoa, or a fresh salad.
  • For a complete meal, consider pairing it with roasted potatoes or a side of sautéed greens.
